1 1/2 Bacardi
1 1/2 Malibu
4oz Pineapple Juice
1 tsp Grenadine

Shake all ingredients with Ice
Strain into a Collins glass with Ice
Garnish with a Pineapple Wedge

Coconut and Pineapple, that is all that I can tell you about this cocktail! The rum has a very subtle role in this drink, it barely even shows, it only in the minutes after you swallow that you are left with a rum flavour.

2oz Light Rum
1oz Creme de Framboise
2oz Cranberry Juice
1/2oz Lime Juice

The Work Order:

  1. Fill shaker with ice
  2. Pour all ingredients
  3. Shake
  4. Strain
  5. Garnish with Lime Wedge
  6. Serve

My Thoughts:

A sour, yet sugary drink with fruity berry flavours, not an exceptional cocktail, but far from horrible, refreshing on a hot day

Ord River Rum

This rum is distilled at The Hoochery (WA’s oldest continuously operating distillery) in Kununurra, Western Australia and is the only rum distilled entirely in Western Australia. Everything in this rum screams small batch, distilled on Spike Dessert’s farm using local sugar cane and wet season rain water, pot distilled, hand bottled and hand labelled. Over 50,000 bottles of Ord River rum are bottled each year. There are 4 variants of Ord River rum, 37%, 40%, Over-Proof 57.7% and Barrel Strength 70.2%. This bottle just happens to be the most popular, the standard 40%.

The Hoochery’s motto “With the Hoochery you get no gimmicks, no fancy labels,  just bloody-good-dinky-di Kimberley spirit!” and this is the case, A dark green bottle, almost like an large, old port bottle, a simple label that has “Ord River Rum” in big letters and a wax sealed cork enclosure. There is nothing fancy about the bottle, no gimmicks here.

Wondering if the rum on the inside was going to be as ‘Un-fancy’ as the bottle, I was eager to pop the cork. As I did I was confronted by a warm, smooth, slightly smoky aroma that just smells amazing, this rum has a sweet nose to it, much like a Single Malt Whisky, however it has sweet cane aroma, and hints of oak. Unlike the Angostura, this run doesnt have the intense vanilla, it has more of a honey/caramel, with a hint of vanilla. The overall aroma is dry, with a slight alcohol presence.

When served neat, Ord River is warm and spicy on the tongue, its smooth and sweet until it hits your mid palette where it explodes leaving tingles and a faint burn, however over ice, this rum becomes amazing, the alcohol in the aroma disappears, leaving a sweet vanilla note with hints of spice. Ice cold, this rum is smooth with no burn on the tongue, however I feel that it loses some of its flavour, it turns to a spirit which I would associate with the sweeter honey/caramel flavours of a whisky.

Ord River Rum has a slightly viscous mouth feel, its not thin, yet not thick or creamy, it sits comfortably in the middle.

At $55.00 AUD a bottle (750mL) Ord River Rum makes a nice addition to any bar, for both sipping and its use in bold, simple cocktails that wont take away from the taste of the rum.

This is a cocktail that I have made in the past and did not get much enjoyment from, why? I suspect that it was due to the Bacardi that I used; Ord River gives the drink a richer flavour, with a much nicer finish.

French Raspberry-Mint Daiquiri

French Raspberry Mint Daiquiri

The Mash Bill:

2oz Light Rum
1/2oz Chambord
1/2oz Lime Juice
1/2oz Simple Syrup
Mint Leaves

The Work Order:

  1. Muddle Mint, Lime and Simple Syrup in your Tin
  2. Pour Rum
  3. Fill with Ice
  4. Shake
  5. Double Strain into Cocktail Glass
  6. Garnish with a Mint Sprig
  7. Serve

My Thoughts:

The colour of the drink is fantastic, a translucent purple/pink, the taste is not much different, Mint and berries dominate the front palette while the rum hides until the mid-palette to show itself. The after taste consists of a deep rum flavour, and earthy mint.

1oz Aged Rum
1/2oz Apple Schnapps
1/2oz Butterscotch Schnapps

The Work Order:

  1. Pour all ingredients into Ice filled shaker
  2. Shake
  3. Strain into Shot Glasses
  4. Serve

My Thoughts:

This shooter smells like a hyper-sweet rum, apart from the names of the spirits that go into the shot, there is pretty much no resemblance to a toffe apple in my opinion.

“An apple strudel in a cocktail glass”

The Mash Bill:

2oz Rum
1/3oz Simple Syrup
1/3oz Cinnamon Syrup
3/4oz Lime Juice
1/4 Apple

The Work Order:

  1. Muddle apple in your shaker tin
  2. Pour all ingredients
  3. Shake
  4. Strain into Cocktail Glass
  5. Garnish with Cinnamon stick
  6. Serve

My Thoughts:

I decided to try out my new Angostura 1919 rum, and well as the bottle of Havana Club Anejo Blanco I bought the other day, so I made this cocktail twice.

With the Havana (Cocktail recipe was found at Havana’s Website) the cocktail was smooth and had lots of juicy lime flavour, the rum was completely hidden, and considering that there was 2oz of it in there, that may not be a good thing! There was a hint of cinnamon in the aftertaste which was nice.

Using the Angostura 1919 there was a much deeper rum flavour to the drink, it wasnt as masked, however it was still smooth. I found that there was more of an apple note to this version.

“An Asian twist from the gateway to the East”

The Mash Bill:

1oz Rum
1/2oz Simple Syrup
1 1/2oz Lime Juice
2/3oz Orange Juice
1 Mandarin

The Work Order:

  1. Muddle Mandarin with Simple Syrup and Lime Juice
  2. Pour Rum and Orange Juice
  3. Shake
  4. Strain into Cocktail Glass
  5. Garnish with Orange Peel twist
  6. Serve

My Thoughts:

More on the sour side due to it having so much lime juice, next time I think I will reduce this to 1oz. The Citrus flavours do come through and add a nice dimension to the sourness. There is very little sign of alcohol in this cocktail, which is fantastic.

Even though it is sour, it is quite a smooth cocktail.

My Thoughts:

The cocktail has a strange, aqua color to it, its pretty cool. This drink has a few distinctive flavours, one of which being the Sake, The Pineapple and Melon flavours also stand out. There is not alot of coconut in the drink.

While the drink has an interesting array of flavours, Im not a fan of Sake, I bought a bottle last night for the first time, and it was different to what I was expecting, why I had such high hopes? Im not entirely sure.

National Daiquiri Day

Today is National Daiquiri Day in the US, while Im not in the states, I still took the chance to celebrate the occasion!

On the 19th of the July each year, people celebrate the history of this classic drink, whose history has many stories, many people associate the creation of the cocktail with Ernest Hemingway, However others believe that it was in fact invented in 1898 in the small iron mining town of Daiquiri near Santiago, Cuba by an engineer named Jennings Stockton Cox.

From what I have read, its seems that Cox was the original maker of the Daiquiri, and Hemingway made it popular in later years at his favourite cocktail bar ‘El Floridita’ during prohibition.

So what was the original recipe?

Bacardi Hand-Shaken Daiquiri

1Part Bacardi Superior
1Part Fresh Lime Juice
1/2tsp Sugar

Hemingway Daiquiri

1 1/2oz Light Rum
1/4oz Maraschino Liqueur
3/4oz Lime Juice
1/4oz Grapefruit Juice

Not so traditional Daiquiri’s

Apple Daiquiri

1 1/2oz Rum
1/2oz Apple Juice
1/2oz Lime Juice
1/2 tsp Superfine Sugar

French Daiquiri

2oz White Rum
2 Dashes Creme de Cassis
1/2 tsp Superfine Sugar
1/2oz Lime Juice

Galliano Daiquiri

1oz Gold Rum
3/4oz Galliano Herbal Liqueur
Juice of 1/2 Limes
1/2oz Sugar Syrup

The Mash Bill:

1 1/2oz dark rum
1/4oz lime juice
1/4oz simple syrup
2 dash Angostura Bitters

The Work Order:

  1. Fill shaker with Ice
  2. Pour All Ingredients into the tin
  3. Shake
  4. Strain into Cocktail Glass
  5. Serve

My Thoughts:

This drink gives of a very strong aroma that has dark, aged hints to it, you can’t really smell anything else, but that is not surprising seen as 3/4 of the drink is rum.

It almost looks like a Manhattan; it has the same dark amber colour.

It’s more bearable than I thought it was going to be, because im not sure if it’s just the Coruba Rum I have, but it’s nasty to smell and taste on its own. Unfortunately I don’t have any other dark rum to compare it to, hopefully in the near future I will.

There is definite rum (..or just Coruba) taste to the drink, and there is a burn just like having it straight, but it is severely reduced.

The lime gives the drink a sour note; however I can’t pick up the bitters.
